Rhum raisins cupcake

Cupcake never dies...I love cupcakes. From one basic recipe, you can modify your cupcake with flavours, fillings, or toppings.
This time I made rhum raisin cupcake. Got the recipe from a friend, Vivi Liong.
What I like most of this recipe is because u can make it in quite a short time.
Here's the recipe :

RHUM RAISINS CUPCAKE (original recipe : lemon cupcake by Vivi Liong)

Ingredients :

150 gr all purpose flour
1/2 tsp baking powder double acting
175 gr castor sugar
2 eggs
100 ml milk
120 gr butter or margarine, melted
Rhum
Raisins
***if you want to make different flavour, just substitute the rhum and raisins with essence or other flavouring***

How to make :

1. Put all ingredients in mixer bowl.
2. Mix at high speed until light and fluffy.
3. Pour the batter into cupcake pan.
4. Bake at 180 C, approx 30 mins.
5. Decorate or just serve plain (that's really up to you, you can create any kind of cupcakes you like).

Tofu nugget

Tofu nugget.....any kind of nuggets are always delicious, according to myself, hehehe.
This one is simple, very easy to make, even for beginner. You can eat it as side dishes dipped in tomato ketchup, chilli sauce, or any sauce you like. Here in Indonesia we even eat it with rice as main course . What don't we eat with rice anyway ??? :-))
Even though we (I mean Indonesians) already ate pizza or bread or potato, that's not enough for us, we'll still look for rice...LOL, but luckily I'm one of few Indonesians that doesn't think that way, otherwise maybe I would get real biiiiggg, cause a lot of rice = a lot of carbohydrate = gaining weight...OMG.
Well, this is the tofu nugget recipe, just in case you want to make it at home (very sorry, I didn't write down the amount of every ingredient, just try to adjust with your taste.

TOFU NUGGET

Ingredients :

Chinese tofu (don't use japanese tofu or silken tofu, it's too soft)
Corn, boiled
Carrot, boiled
***you can substitute the corn and carrot with other veggies***
Beef sausage
Spring onion
Egg

Spices, ground together :

Garlic
Shallot
Salt
White pepper

How to make :

1. Put the tofu in a bowl, soften with fork or just use your bare hands (don't forget to wash them first though...:-))
2. Add in the spices and other ingredients, mix well.
3. Make balls from the tofu, deep fry until golden brown, ready to serve.

Kenneth's 2nd Birthday...balls everywhere

This cake was for kenneth, my friend's son, who turned 2 today, Sept 6th, 2010.
Sonya (kenneth's mom) sent me a message few days ago. Said she wanted to order a birthday cake for her second son. She also sent me a picture, wanted the cake designed like that.
The theme was balls...any kind of ball : soccer, basketball, softball, football.
Sonya wanted quite a big cake, but she didn't want it to be full 'cake'. So, I suggested to make dummy cake, with the real cake separated. And that's the deal, dummy cake 40x30 cm, and sponge cheese cake with cream cheese filling and topped with shredded cheese.
Happy birthday kenneth...hope you and fam enjoy the cake.
